Fish and seafood sometimes need to be prepared before cooking. It’s easiest, of course, to ask your fishmonger to do this job for you, but if you have a sharp, flexible knife at home, it’s not that hard once you get the hang of it.
INGREDIENTS FOR 5 SERVINGS.
2 skinless wild-caught salmon fillets, about 12 ounces total
10 very thin slices of nitrate-free bacon, cut in half
2 tbsp fresh chopped parsley, to garnish.
Slice your salmon fillets into 1.5 bite-sized cubes as shown, then roll each cube with half a slice of bacon.
Heat a large non-stick skillet over medium heat, and fry the bacon-wrapped salmon cubes until nicely browned on all sides, about 8-10 minutes, flipping them constantly.
Alternatively, Preheat your oven to 190 C, and line a baking sheet with parchment paper.
Place salmon onto a lined baking tray, place tray in your preheated oven, and bake for 13-15 minutes.
Garnish with fresh chopped parsley and serve immediately.
